Pancit Bihon (for long life and good luck)

Ingredients:

Pancit Bihon (for long life and good luck)

  • 1 (8 ounces) package pancit bihon noodles (available in the Asian section)
  • 1/2 pound ground pork, cooked and drained
  • 3 cloves of garlic, minced
  • 1 Maui onion, peeled and sliced
  • 2 cups of low-sodium chicken broth
  • 1/4 cabbage, sliced into strips
  • 1/3 cup green onions, cut into pieces
  • 1 carrot, julienned
  • 3/4 cup diced celery
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Calamansi wedges for serving

Directions:

  1. Soak the pancit bihon noodles to soften for 10 minutes, drain and set aside.
  2. In a large non-stick pan, over medium-high heat, cook pork.
  3. Add garlic and onions and cook for 2-3 minutes.
  4. Add chicken broth and remaining vegetables.
  5. Cook for 3-5 minutes until cooked.
  6. Mix in the pancit bihon noodles; add soy sauce, cook for about 5 minutes or until noodles are soft.
  7. Season with salt and pepper to taste.
  8. Serve hot with sliced calamansi on the side.

Makes 6 servings.
