Pickled Mango

Ingredients:

Pickled Mango

  • 8 cups green mango slices
  • 2 cups sugar
  • 1 cup rice vinegar
  • 1/4 cup Hawaiian salt
  • 10 li hing mui

Directions:

  1. Put mango slices into a jar.
  2. Combine remaining ingredients.
  3. Bring to a boil; cool to lukewarm.
  4. Pour over mangoes.
  5. Let stand for 24 hours, then store in refrigerator.

Makes 4 quarts.
