Pork Guisantes

Ingredients:

Pork Guisantes

  • 1 1/2 pounds lean pork, cut into 1 x 1 1/2-inch pieces
  • 2 cloves garlic, peeled and minced
  • 1/2 cup water
  • 1 (8-ounce) can no-salt tomato sauce
  • 2 teaspoons half and half
  • 1 teaspoon fish sauce
  • 1 bay leaf
  • 1/4 teaspoon pepper
  • 1 (10-ounce) package frozen peas
  • 1/2 cup onion, chopped
  • 1 red bell pepper, seeds removed and sliced
  • 1/2 cup pimento peppers (with juice), chopped

Directions:

  1. Separate fatty and lean pieces of pork.
  2. In a large pan on medium high heat, sauté pork fat and garlic until browned.
  3. Add lean pork and continue cooking until pork is done.
  4. Add water, tomato sauce, half and half, fish sauce, bay leaf, pepper.
  5. Simmer for 10 minutes.
  6. Add peas, onions, red peppers and simmer for 1 minute.
  7. Add in pimento peppers.

Serves 6.
