- Separate fatty and lean pieces of pork.
- In a large pan on medium high heat, sauté pork fat and garlic until browned.
- Add lean pork and continue cooking until pork is done.
- Add water, tomato sauce, half and half, fish sauce, bay leaf, pepper.
- Simmer for 10 minutes.
- Add peas, onions, red peppers and simmer for 1 minute.
- Add in pimento peppers.
