Ingredients:
Pork or Chicken Tofu
Try this delicious recipe from the Electric Kitchen!
1 pound pork or boneless skinless chicken
1 tablespoon salad oil
1/2 cup soy sauce
1/4 cup water
1/4 cup sugar
1 medium onion, sliced
1 small piece ginger root, crushed
1 block firm tofu, cubed
3 green onion, cut in 2-inch lengths
Directions:
Thinly slice pork.
Heat oil in skillet; brown pork.
Add soy sauce, water, sugar, onion and ginger root.
Bring to a boil and simmer for 5 minutes.
Gently stir in tofu; simmer a few minutes longer.
Add green onions just before serving.
Makes 6 servings.
Approximate Nutrient Analysis per serving (based on pork): 310 calories, 13 g fat, 2.5 g saturated fat, 50 mg cholesterol, greater than 1300 mg sodium, 17 g carbohydrate, 3 g fiber, 10 g sugar, 34 g protein

Tried it today. I Didn't have watercress and fresh ginger so I used powdered ginger and added shiitake mushrooms. Instead of sugar I used Safeway sugar substitute. It came out really good. I'll be using this pork tofu recipe from on.

So ono! I added a couple dashes of mirin too, wonderful dish! I didn't measure-- just eyeballed the shoyu, sugar, and water though and still came out wonderfully. Shoyu/sugar/mirin dishes usually require tasting and adjusting anyways ;) Yummy recipe -- my mother and grandmother used to cook this all the time!
