Portabella Mushroom Burger

Ingredients:

Portabella Mushroom Burger

  • 4 portabella mushroom caps
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon fresh basil, finely chopped
  • 1 tablespoon fresh oregano
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • 4 slices Provolone cheese
  • Roasted red peppers (optional)
  • 4 whole wheat hamburger buns

Directions:

  1. Heat grill to medium-high heat.
  2. Lightly oil grill grate.
  3. Place mushroom caps, smooth side up, in a shallow dish.
  4. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt and pepper.
  5. Pour over mushrooms.
  6. Let stand at room temperature for 15 or so, turning twice.
  7. Place mushrooms on the grill, reserving marinade for basting.
  8. Grill for 5-8 minutes on each side, or until tender.
  9. Brush with marinade frequently.
  10. Top with cheese and optional red peppers during the last 2 minutes of grilling.
  11. Serve on hamburger buns.
