Pumpkin with Daikon

Ingredients:

Pumpkin with Daikon

  • 2 lb pumpkin (kabocha)
  • 1 lb daikon (white radish)
  • 1/2 cup water
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 small piece ginger root, sliced
  • 1 large clove garlic, crushed
  • Dash of salt
  • 1/4 cup sliced green onions

Directions:

  1. Rinse pumpkin and cut into halves leaving skin on; remove and discard seeds.
  2. Cut pumpkin into 1-inch cubes.
  3. Pare daikon; cut into 1-inch cubes.
  4. In a large saucepot, combine water, soy sauce, sugar, ginger, garlic, and salt.
  5. Cover and bring to a boil.
  6. Add pumpkin and daikon.
  7. Lower heat and tossing mixture occasionally, cook for 15 minutes or until pumpkin is done.
  8. Garnish with green onions.

Makes 6 servings.
