Red Velvet Waffles

Ingredients:

1 box red velvet cake mix, plus the ingredients listed on the box
4 ounces low-fat cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
Pinch of salt
3/4 cup warm skim milk

Directions:

  1. Preheat a waffle iron.
  2. Prepare the cake mix according to the box directions.
  3. Spray the waffle iron with nonstick cooking spray, then pour batter onto the iron, being careful not to overfill.
  4. Cook until edges are lightly browned and batter is cooked through.
  5. With a hand mixer, whisk together remaining ingredients until icing is smooth.
  6. Drizzle icing over each waffle serve immediately.

Makes 16 kid-sized servings (each serving is 1/4 of a large waffle).
