Salsa (for fish tacos and quesadillas)

Ingredients:

Salsa (for fish tacos and quesadillas)

  • 1 large cucumber diced small, seeds removed
  • 1 large stick celery, finely diced
  • 1 large red or yellow onion, finely diced
  • 1-1/2 cups cherry tomatoes, halved
  • 2 large ripe tomatoes, seeds removed and diced
  • 1/2 cup fresh lemon or lime juice
  • Pinch of salt and pepper
  • Cilantro, optional

Directions:

  1. In a large bowl, combine all ingredients.
  2. Serve with tacos or quesadillas.
  3. Store in refrigerator for up to 3 days.

Makes about 5 cups.
