Sauteed Chayote with Mushrooms

Ingredients:

Sauteed Chayote with Mushrooms

  • 1 large chayote, pared
  • 1 lb Portobello, shiitake, oyster, or domestic mushrooms
  • 2 teaspoons butter
  • Salt and pepper to taste

Directions:

  1. Sliver chayote and mushrooms.
  2. In a skillet, heat butter.
  3. Sauté mushrooms for a few minutes; add chayote and continue cooking for 1 minute.
  4. Season with salt and pepper.
  5. Serve immediately.

Makes 4 to 6 servings.
