Seared Opah with Shiitake Mushroom Sauce
- 1 bunch leafy green vegetables (such as won bok or choy sum), steamed
- 2 pounds opah fillets, cut 1/2 inch thick
- Salt and pepper to taste
- 10-12 dried shiitake mushrooms, soaked in 1 cup hot water for 5 minutes and thinly sliced (water will be used for broth as noted below)
- 1 cup shiitake mushroom broth
- 1/4 cup mirin
- 1/4 cup water
- 2 tablespoons butter
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- Olive oil to coat pan
- 1-2 tablespoons cornstarch
- 1/4 to 1/2 cup water
