Slow Cooker Rustic French Onion Soup

Ingredients:

Slow Cooker Rustic French Onion Soup

  • Non-stick cooking spray
  • 12 cups thinly sliced onions (6 large)
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt or to taste
  • 1 teaspoon pepper
  • 1/4 teaspoon dried thyme
  • 5 tablespoons flour
  • 3/4 cup cooking sherry
  • 1/4 cup water
  • 4 cups low-sodium beef broth
  • 20 slices (1/2 inch thick) baguette
  • 1 1/2 cups shredded Gruyère cheese
  • Fresh thyme for garnish

Directions:

  1. Spray 6-7 quart slow cooker with cooking spray.
  2. In slow cooker, place onions, butter, salt, pepper and dried thyme.
  3. In medium bowl, whisk flour, cooking sherry and water until blended.
  4. Stir into onion mixture.
  5. Cover; cook on LOW heat setting 9-10 hours or until onions are soft and deep brown.
  6. Stir broth into slow cooker.
  7. Cover; cook on HIGH heat for 10 minutes or until hot.
  8. Set oven to broil.
  9. Place bread slices on ungreased cookie sheet.
  10. Sprinkle with cheese.
  11. Broil 5-6 inches from heat for 1-2 minutes or until cheese is melted.
  12. Top each bowl of soup with 2 cheese toasts.
  13. Garnish with fresh thyme.
