Spicy Bacon Chicken Sliders with Ginger Jalapeno Relish
Everything is better with bacon. What meal isn’t improved by adding crispy, smoky bacon? Whether you like it with eggs, added to a burger, or even sprinkled on a donut, there’s a bacon dish for everyone. “Bring home the bacon” may now have a new meaning for you. Enjoy this recipe featuring bacon from Chef Fortuna Cooley, instructor at Kapiolani Community College.
Sliders:
- 8 boneless, skinless chicken thighs
- 1 1/2 tablespoons olive oil
- Salt and pepper to taste
- 1 1/2 tablespoons paprika
- 8 ounces cheddar cheese, grated or sliced
- 8 slices bacon, cooked
- 8 taro rolls, sliced in half
Ginger Jalapeno Relish:
- 1/2 cup mayonnaise
- 1/4 cup finely minced red onion
- 1 tablespoon finely minced fresh ginger
- 2 tablespoons diced, candied ginger
- 1/2 to 1 jalapeno, seeded, finely minced
Sliders:
- Slice chicken thighs; set aside.
- In a large sauté pan on medium heat, add oil.
- Swirl oil to evenly coat bottom of pan.
- Place sliced chicken in pan, spreading them evenly so they don’t overlap.
- Allow chicken to cook, without moving them, about 5-6 minutes.
- Season with salt, pepper, and paprika.
- Turn chicken over and cook on flip side for about 3 minutes, until cooked through.
- Remove from heat.
- Sprinkle cheese over chicken while still in pan, allowing it to melt slightly; set aside.
Ginger Jalapeno Relish:
- In a medium bowl, combine all ingredients.
- Assemble taro roll sliders by dividing chicken and cheese, add bacon and top with a dollop of relish.
Serves 8.
Tip: Cooking bacon in water will lessen the splattering and will give you a crispy, tasty but not greasy piece of bacon.
