Ingredients:

Spicy Bacon Chicken Sliders with Ginger Jalapeno Relish

Sliders:

  • 8 boneless, skinless chicken thighs
  • 1 1/2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 1/2 tablespoons paprika
  • 8 ounces cheddar cheese, grated or sliced
  • 8 slices bacon, cooked
  • 8 taro rolls, sliced in half

Ginger Jalapeno Relish:

  • 1/2 cup mayonnaise
  • 1/4 cup finely minced red onion
  • 1 tablespoon finely minced fresh ginger
  • 2 tablespoons diced, candied ginger
  • 1/2 to 1 jalapeno, seeded, finely minced

Directions:

Sliders:

  1. Slice chicken thighs; set aside.
  2. In a large sauté pan on medium heat, add oil.
  3. Swirl oil to evenly coat bottom of pan.
  4. Place sliced chicken in pan, spreading them evenly so they don’t overlap.
  5. Allow chicken to cook, without moving them, about 5-6 minutes.
  6. Season with salt, pepper, and paprika.
  7. Turn chicken over and cook on flip side for about 3 minutes, until cooked through.
  8. Remove from heat.
  9. Sprinkle cheese over chicken while still in pan, allowing it to melt slightly; set aside.

Ginger Jalapeno Relish:

  1. In a medium bowl, combine all ingredients.
  2. Assemble taro roll sliders by dividing chicken and cheese, add bacon and top with a dollop of relish.

Serves 8.

Tip: Cooking bacon in water will lessen the splattering and will give you a crispy, tasty but not greasy piece of bacon.
