Ingredients:
Spinach and Basil Soup with Orzo
Try this delicious recipe from the Electric Kitchen!
- 2 teaspoons extra virgin olive oil
- 1 small onion, chopped
- 4 cloves garlic, chopped
- 4 (14.5-ounce) cans low-sodium chicken broth
- 1 cup uncooked orzo pasta
- 2 (14.5-ounce) cans Italian-style stewed chopped tomatoes
- 1/4 cup fresh basil chiffonade
- 1 (10-ounce) package frozen chopped leaf spinach (no need to thaw) or fresh spinach (washed)
- 1 teaspoon pepper
- Salt to taste
- Fresh grated Parmesan cheese, for garnish
Directions:
- In a large pot, heat olive oil; add onion and garlic and saute until onion is tender.
- Add chicken broth and bring to a boil.
- Stir in orzo, tomatoes, basil, spinach, pepper, and salt.
- Reduce heat to a simmer.
- Cook until pasta is tender.
- Sprinkle Parmesan cheese on top before serving.
- Serve hot with fresh bread or garlic bread.
Serves 6.

Super easy to make and very ono! I added Italian sausage to make it a meal all by itself.
