Spinach and Basil Soup with Orzo

Ingredients:

Spinach and Basil Soup with Orzo

  • 2 teaspoons extra virgin olive oil
  • 1 small onion, chopped
  • 4 cloves garlic, chopped
  • 4 (14.5-ounce) cans low-sodium chicken broth
  • 1 cup uncooked orzo pasta
  • 2 (14.5-ounce) cans Italian-style stewed chopped tomatoes
  • 1/4 cup fresh basil chiffonade
  • 1 (10-ounce) package frozen chopped leaf spinach (no need to thaw) or fresh spinach (washed)
  • 1 teaspoon pepper
  • Salt to taste
  • Fresh grated Parmesan cheese, for garnish

Directions:

  1. In a large pot, heat olive oil; add onion and garlic and saute until onion is tender.
  2. Add chicken broth and bring to a boil.
  3. Stir in orzo, tomatoes, basil, spinach, pepper, and salt.
  4. Reduce heat to a simmer.
  5. Cook until pasta is tender.
  6. Sprinkle Parmesan cheese on top before serving.
  7. Serve hot with fresh bread or garlic bread.

Serves 6.

Super easy to make and very ono! I added Italian sausage to make it a meal all by itself.
