Super Nachos

Ingredients:

Super Nachos

  • 1 pound lean ground beef or poultry
  • 1 large onion, chopped
  • Few drops hot pepper sauce
  • 1 can (1 pound) refried beans
  • 1 can (4 ounces) diced green chiles, drained
  • 3 cups shredded jack cheese
  • 1 bottle (8 ounces) taco sauce
  • 1/4 cup chopped green onions
  • 1 cup sliced black olives
  • 1 cup avocado dip
  • 1 cup sour cream
  • 1/4 cup chopped Chinese parsley
  • 1 pound tortilla chips

Directions:

  1. In a skillet, brown meat well.
  2. Add onion and saute lightly.
  3. Stir in hot pepper sauce.
  4. Spread beans in a shallow 14 x 10-inch oval oven-proof dish.
  5. Top with meat mixture; sprinkle with drained chiles and cheese.
  6. Drizzle with taco sauce.
  7. Bake, uncovered, in electric oven at 400°F for 20 to 30 minutes or microwave at medium-high power for 10 to 15 minutes or until hot throughout.
  8. Remove from oven.
  9. Top with green onions, olives, avocado dip, sour cream, and Chinese parsley.
  10. Place tortilla chips around edges.
  11. Serve immediately.

Makes 10 to 12 servings.
