Taro and Chinese Roast Pork Stuffing

Ingredients:

Taro and Chinese Roast Pork Stuffing

  • 2 cups diced Chinese-style roast pork
  • 1 Maui onion, diced
  • 4 cups diced and cooked taro
  • 1 teaspoon poultry seasoning (optional)
  • 1 (7.5-ounce) package stuffing mix
  • 1/2 cup thinly sliced green onion
  • 1 (14.5-ounce) can chicken broth, divided
  • 1/2 cup butter, melted

Directions:

  1. In a large skillet or wok, heat roast pork on medium heat, remove and set aside.
  2. Saute onion in wok until tender.
  3. Add taro, poultry seasoning, roast pork, stuffing mix, green onion, 1/2 of the chicken broth, and butter; mix thoroughly.
  4. Add more chicken broth if the stuffing mix is too dry.
  5. Stir stuffing until heated through, stirring every minute or two, to keep the stuffing from browning.

Makes enough stuffing for a 12-14 pound turkey or about 17 servings.
