Taro and Lima Beans with Shrimp

Ingredients:

Taro and Lima Beans with Shrimp

  • 1 tablespoon salad oil
  • 3 tablespoons slivered ginger root
  • 1/2 teaspoon minced garlic
  • 2 medium tomatoes, cut into wedges
  • 1 pkg (1 oz) dried shrimp, soaked in water
  • 2 tablespoons patis (clear fish sauce)
  • 1 1/2 lb cooked taro, cut into 1-inch cubes
  • 2 pkg (10 oz size) frozen lima beans

Directions:

  1. In a saucepan, heat oil.
  2. Sauté ginger and garlic for 1 minute.
  3. Add tomatoes; continue to cook until a sauce is formed.
  4. Add the shrimp and patis; simmer for 5 minutes.
  5. Add taro and lima beans; continue cooking until taro absorbs most of the liquid about 5 to 10 minutes.
  6. Serve hot.

Makes 6 servings.
