Taro Crab Hash and Garlic Remoulade
Remoulade:
- 1/2 quart mayonnaise
- 2 tablespoons minced garlic
- 1/8 cup minced parsley
- 1/8 cup sliced green onions
- 1 tablespoon minced fresh basil
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- Salt, pepper, and garlic powder to taste
- 3/4 quart sour cream
Hash:
- 1/2 pound Russet potato, peeled
- 2 pounds taro, steamed, cooled, grated using the largest holes on the grater
- 1/2 cup diced caramelized onion
- 1/4 cup finely chopped parsley
- 1/4 cup thinly sliced green onion
- 1/4 cup grated Parmesan cheese
- 1/4 cup lump crab meat, picked
- 2 whole eggs
- 1/4 cup panko
- Salt and pepper, to taste
- Olive oil, for sautéing
