Tequila-Lime Baked Chicken

Ingredients:

Tequila-Lime Baked Chicken

  • 2 tablespoons lime juice
  • 2 cups salad oil
  • 2 teaspoons dried thyme leaves
  • 2 tablespoons dried oregano leaves
  • 2 tablespoons dried basil leaves
  • 1 teaspoon pepper
  • 2 teaspoons seasoned salt
  • 1 tablespoon tequila
  • 2 tablespoons minced garlic
  • 2 whole (2 lb size) broiler chickens, split into halves

Directions:

  1. For marinade, put lime juice in a bowl or blender; slowly whisk or blend in the oil.
  2. Add remaining ingredients, except the chicken, and mix well.
  3. Pour marinade over chicken and marinate in refrigerator for several hours or overnight.
  4. Preheat electric oven to 300°F.
  5. Bake chicken for 30 to 40 minutes or until done.

Makes 4 servings.
