Tex-Mex Pizza

Ingredients:

Tex-Mex Pizza

  • 1 tablespoon cornmeal
  • 1 pkg (10 oz) refrigerated pizza dough
  • 1 cup prepared black beans*
  • 1 Maui onion, sliced
  • 1 green pepper, cut into strips
  • 1 red pepper, cut into strips
  • 1 can (2 1/4 oz) sliced black olives
  • 2 tablespoons chopped jalapeno pepper
  • 2 tablespoons diced chiles
  • 2 cups shredded jack cheese
  • 2 cups shredded lettuce
  • 1 tomato, diced
  • 1/2 cup salsa
  • 1/2 cup sour cream (optional)
  • 1/2 cup guacamole (optional)

Directions:

  1. Preheat electric oven to 450°F.
  2. Lightly grease a 15 x 10 x 1-inch baking pan; sprinkle with cornmeal.
  3. Press pizza dough into prepared pan or roll dough into three 6-inch circles and place on prepared pan.
  4. In a food processor or blender, puree beans; spread over dough.
  5. Layer onion, green and red peppers, olives, jalapeno pepper, and chiles over beans.
  6. Sprinkle with cheese.
  7. Bake for 15 to 16 minutes.
  8. Top with lettuce, tomato, salsa, sour cream, and guacamole.

Makes 6 servings.

*Prepare black beans as in Black Beans and Rice, Local-style.
