Three-Pepper Pork

Ingredients:

Three-Pepper Pork

  • 1 lb lean boneless pork
  • Vegetable oil spray
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 poblano chili pepper, chopped
  • 1 tablespoon sugar
  • 1 tablespoon light soy sauce
  • 1 teaspoon finely minced ginger root
  • 1 teaspoon sesame oil
  • 1 teaspoon rice wine vinegar

Directions:

  1. Trim all visible fat from pork; thinly slice pork.
  2. Spray a large skillet with vegetable spray.
  3. Heat skillet; add pork and stir-fry until done.
  4. Remove from skillet.
  5. Add bell peppers and chili pepper; cook for 3 minutes, or until bell peppers are tender but still crisp.
  6. Combine the remaining ingredients; add to skillet with pork.
  7. Cook for 2 more minutes, or until thoroughly heated.

Makes 4 servings.
