- Preheat oven to 350°F.
- Spray a glass or ceramic baking dish with non-stick cooking spray.
- Spread quinoa, oats, and nuts on a cookie sheet and toast in oven for 6-8 minutes or until golden brown.
- Return mixture to a large bowl; add coconut and dried fruit.
- In a medium saucepan, combine salt, peanut butter, honey, 1 tablespoon of oil, and brown sugar.
- Over medium heat, simmer for about 3-5 minutes or until the ingredients are combined and have a smooth, syrup consistency.
- Pour over oat mixture and combine until dry ingredients are evenly coated.
- Pour into baking dish.
- Firmly pack mixture into pan.
- Bake for 20 minutes.
- Let cool for up to 2 hours and then cut.
- In a medium microwave-safe bowl, add chocolate chips and 1 tablespoon of canola oil.
- Microwave on high in 30-second intervals stirring in between, until chocolate is completely melted.
- Dip the bottom of each bar into the melted chocolate and set on parchment paper until hardened.
