Tofu and Pears in Ginger Syrup

Ingredients:

Tofu and Pears in Ginger Syrup

  • 1 can (16 oz) pears in heavy syrup, undrained
  • 1/4 cup thinly slivered fresh ginger root
  • 8 oz soft calcuim-set tofu
  • 1 teaspoon powdered sugar

Directions:

  1. Drain pear syrup into saucepan; set pears aside.
  2. Add ginger to syrup; cover and bring to a boil, lower heat and simmer for 5 minutes; cool.
  3. Drain tofu; cut into 1 x 1/2 x 1/2-inch pieces.
  4. Cut pears the same size as tofu.
  5. In a bowl, combine tofu and pears; add ginger syrup.
  6. Refrigerate for 12 to 24 hours.
  7. Sprinkle with powdered sugar before serving.

Makes 4 servings.
