Tofu Mocha Pie

Ingredients:

Tofu Mocha Pie

  • 2 cups semi-sweet chocolate chips
  • 1/3 cup coffee liqueur
  • 1 teaspoon vanilla
  • 1 container (10.5 oz) silken firm tofu, drained
  • 1 tablespoon honey
  • 1 (8-inch) ready-made chocolate graham cracker pie crust
  • 1 container (8 oz) frozen whipped topping, thawed

Directions:

  1. Melt chocolate chips in a double boiler or microwave oven.
  2. Add coffee liqueur and vanilla; mix well.
  3. In a blender, puree tofu until smooth.
  4. Add chocolate mixture and honey; blend well.
  5. Pour tofu mixture into pie crust and chill until filling is set, about 2 hours.
  6. Top with whipped topping before serving.

Makes 8 servings.
