Tofu Rolls with Peanut Sauce

Ingredients:

Tofu Rolls with Peanut Sauce

Tofu Rolls:

  • 8 ounces rice stick
  • 2 tablespoons canola oil
  • 2 heaping tablespoons minced garlic
  • 1/2 medium round onion, thinly sliced
  • 1 heaping tablespoon minced lemon grass
  • 2 heaping tablespoons oyster sauce
  • 2 pieces Aloha Brand atsuage (deep-fried tofu), cut into 1/4-inch strips
  • 8 rice paper wrappers (12-inch rounds)
  • 1 cup warm water (in a large bowl)
  • 1 head iceberg lettuce, shredded
  • 10 ounces bean sprouts
  • 1 carrot, peeled and shredded
  • 1 cucumber, cut into 1/4-inch strips, 3 inches long
  • Handful of fresh mint leaves

Peanut Sauce:

  • 4 heaping tablespoons hoisin sauce
  • 1/2 cup water
  • 2 heaping tablespoons creamy peanut butter
  • 1 tablespoon sugar
  • 1 small red chili pepper, seeded and minced
  • 2 teaspoons canola oil
  • 1 tablespoon minced garlic
  • 1 tablespoon cornstarch, mixed with enough water to make a slurry
  • 2 tablespoons minced roasted peanuts (optional)

Directions:

  1. Soak rice sticks in boiling water for 5 minutes.
  2. Rinse in cold water; drain.
  3. Set aside.
  4. In a frying pan on medium high heat, heat oil.
  5. Add garlic, onions, lemon grass, oyster sauce, and tofu.
  6. Cook until onion is translucent.
  7. Set aside.
  8. Dip rice paper into warm water.
  9. Quickly remove and lay flat on a clean, damp towel.
  10. (Note: the sticky side of the wrapper should be facing down, in contact with the towel.)
  11. Lay shredded lettuce on bottom third of wrapper.
  12. Place rice sticks, carrots, cucumber, and several bean sprouts on top of lettuce.
  13. In the middle of the wrapper, arrange two strips of tofu, mint leaves, and two more strips of tofu.
  14. Roll wrapper halfway up to form a cylinder.
  15. Fold both sides of wrapper over the filling and continue to roll until fully sealed.
  16. Keep covered with a clean, damp towel until ready to serve.
  17. To serve, slice each roll diagonally in half and arrange on a serving platter.
  18. Serve with Peanut Sauce.

Makes 16 appetizer servings.

Peanut Sauce:

  1. In a small mixing bowl, mix hoisin sauce, water, and peanut butter until creamy.
  2. Add sugar and chili pepper.
  3. Heat oil in a small saucepan and add garlic.
  4. Add peanut butter mixture and bring to a boil.
  5. Add cornstarch slurry to thicken.
  6. Allow to cool.
  7. Sprinkle with peanuts.
  8. Use as a dipping sauce for Tofu Rolls.

Makes about 1 cup sauce.
