Tofu Rolls with Peanut Sauce
Tofu Rolls:
- 8 ounces rice stick
- 2 tablespoons canola oil
- 2 heaping tablespoons minced garlic
- 1/2 medium round onion, thinly sliced
- 1 heaping tablespoon minced lemon grass
- 2 heaping tablespoons oyster sauce
- 2 pieces Aloha Brand atsuage (deep-fried tofu), cut into 1/4-inch strips
- 8 rice paper wrappers (12-inch rounds)
- 1 cup warm water (in a large bowl)
- 1 head iceberg lettuce, shredded
- 10 ounces bean sprouts
- 1 carrot, peeled and shredded
- 1 cucumber, cut into 1/4-inch strips, 3 inches long
- Handful of fresh mint leaves
Peanut Sauce:
- 4 heaping tablespoons hoisin sauce
- 1/2 cup water
- 2 heaping tablespoons creamy peanut butter
- 1 tablespoon sugar
- 1 small red chili pepper, seeded and minced
- 2 teaspoons canola oil
- 1 tablespoon minced garlic
- 1 tablespoon cornstarch, mixed with enough water to make a slurry
- 2 tablespoons minced roasted peanuts (optional)
