Tortilla Soup

Ingredients:

Tortilla Soup

  • 1 tablespoon salad oil
  • 1 Maui onion, diced
  • 3 cans (14 1/2 oz size) fat-free chicken broth
  • 2 cans (8 oz size) tomato sauce
  • 1 can (16 oz) whole tomatoes, including liquid and diced
  • 1 lb frozen, chopped roasted green chile, thawed
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 pkg (10 oz) tortilla chips
  • 3 cups grated cheddar cheese

Directions:

  1. In a large saucepan, heat oil.
  2. Sauté onion until transparent.
  3. Add broth, tomato sauce, tomatoes, green chile, and garlic powder, and pepper; cover and bring to a boil.
  4. Lower heat and simmer for 20 minutes.
  5. To serve, place a few tortilla chips in each bowl.
  6. Fill bowls 3/4 full with soup; top with the cheese.
  7. Serve with remaining tortilla chips.

Makes 8 servings.
