Tropical Chicken Salad

Ingredients:

Tropical Chicken Salad

Salad:

  • 1 cup shredded cooked chicken
  • 2 cups cherry or grape tomatoes, halved
  • 2 cups strawberries, sliced
  • 1/2 cup chopped watermelon
  • 1/2 cup chopped pineapple
  • 1/2 cup chopped macadamia nuts
  • 8 cups mesclun salad mix

Dressing:

  • 1/3 cup vegetable oil
  • 1/3 cup sugar
  • 1/4 cup red wine vinegar
  • 1/4 cup chopped red onion
  • Juice of 1/2 orange

Directions:

  1. Combine salad ingredients in a large salad bowl.
  2. Mix dressing ingredients in a blender for 30 seconds.
  3. Just before serving, lightly toss dressing with salad ingredients.

Makes 6 servings.
