Tropical Nut Bread

Ingredients:

Tropical Nut Bread

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can (8 1/4 ounces) crushed pineapple, including liquid
  • 1 cup mashed bananas
  • 1/3 cup orange juice
  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 2 cups macadamia nut bits

Directions:

  1. Preheat oven to 350°F .
  2. Grease a 9 x 5 x 3-inch loaf pan.
  3. Sift flour with baking powder, baking soda, and salt.
  4. Combine pineapple, including liquid, bananas, and orange juice.
  5. In large bowl of electric mixer, cream butter and sugar; add eggs, one at a time, beating well after each addition.
  6. Add flour alternately with pineapple mixture, mixing only enough to moisten flour.
  7. Stir in nuts.
  8. Pour into prepared pan; bake for 1 hour and 15 minutes, or until done.

Makes 1 loaf.

I make this bread all the time! I switch between walnuts and macadamia, depending on what I have. My coworkers LOVE IT!!!!
