Turkey Gumbo

Demonstrated by: Executive Chef Elmer Guzman of Sam Choy's Restaurant.

Ingredients:

Turkey Gumbo

  • 3/4 cup salad oil
  • 3/4 cup flour
  • 2 cups chopped onions
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped celery
  • 1/2 lb Portuguese sausage, sliced
  • 3 bay leaves
  • 2 quarts chicken broth or turkey stock
  • 1/2 lb cooked turkey, diced
  • Hot pepper sauce to taste
  • Worcestershire sauce to taste

Directions:

  1. In a saucepot, combine the oil and flour.
  2. Stirring constantly, cook on medium heat for 25 to 30 minutes or until mixture is a deep golden brown.
  3. Add onions, bell pepper, and celery; cook for 5 to 7 minutes.
  4. Add sausage, bay leaves and broth; cook for 20 to 30 minutes.
  5. Add turkey, hot pepper sauce, and Worcestershire sauce.
  6. Serve over cooked rice.

Makes 6 to 8 servings.
