Valentine Tomato Soup

Ingredients:

Valentine Tomato Soup

  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • Pinch of red chili flakes
  • 1 small onion, minced
  • 1 medium carrot, grated
  • 11 Roma tomatoes, roasted and skinned
  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 3 cups low-sodium chicken broth
  • 1 (24-ounce) can tomato basil sauce
  • Sugar to taste
  • 2 teaspoons minced basil
  • 4 tablespoons heavy whipping cream
  • 2 tablespoons grated Parmesan cheese
  • Pepper and sea salt to taste

Directions:

  1. Heat olive oil in a medium soup pot over medium-high heat.
  2. Add garlic, chili flakes, onion, and carrots; sauté for 5 minutes.
  3. Add tomatoes and beans and saute for an additional 3 minutes.
  4. Add broth, tomato sauce and sugar to taste.
  5. Bring to a boil.
  6. Reduce heat to low and add remaining ingredients.
  7. Simmer for 10 minutes.
  8. Using an immersion blender, carefully blend soup until smooth.
  9. Top with your favorite grilled cheese sandwich cut in the shape of a heart.
