Vegetarian Black Bean Chili Mix

Ingredients:

Vegetarian Black Bean Chili Mix

Chili mix:

  • 3 cups black beans, sorted
  • 3 tablespoons dehydrated onion
  • 3 tablespoons granulated garlic
  • 1 teaspoon crushed oregano
  • 2 teaspoon salt
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • Optional garnishes: Cheese, Chinese parsley, chopped green onions, squeeze of lime juice

Directions:

Chili mix:

  1. Layer all ingredients.
  2. Store in an air-tight 1-quart jar until ready to use.

To make chili:

  1. In a large pot, add jar contents, olive oil and cover beans with 2 inches of water.
  2. Bring to a boil and simmer until very well done (about 2 hours).
  3. Beans should be very soft.
  4. Add water as needed to keep beans from sticking.
  5. There should be some liquid left on beans when done.
  6. Serve on top of hot rice.
  7. Sprinkle with optional toppings.

Serves 4.
