- 3 to 4 cucumbers, diced
- 3 to 4 red bell peppers, diced
- 1/2 pound fresh mint, finely chopped
- 3 bunches cilantro (Chinese parsley), finely chopped
- 2 to 3 lemons
- 3 tablespoons extra virgin olive oil
