White Chili

Ingredients:

White Chili

  • 1 pound boneless skinless chicken breast, cut into 1/2-inch cubes
  • 1 medium onion, chopped
  • 1 1/2 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • 2 (15.8 ounce) cans great northern beans, rinsed and drained
  • 1 (14.5 ounce) can chicken broth
  • 2 (4 ounce) cans chopped green chilies
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • 1/2 cup whipping cream

Directions:

  1. In a large saucepan, sauté chicken, onion, and garlic powder in oil until chicken is cooked.
  2. Add beans, broth, chilies, and seasoning.
  3. Bring to a boil.
  4. Reduce heat; simmer, uncovered, for 30 minutes.
  5. Remove from heat; stir in sour cream and cream.
  6. Serve immediately.

Makes 6 servings.
