Wikiwiki Breakfast Burritos

Ingredients:

Wikiwiki Breakfast Burritos

  • 1 tablespoon olive oil
  • 1/2 cup minced onions
  • 4 eggs
  • 2 tablespoons fat-free milk
  • 2 tablespoons finely chopped green onions
  • 1/8 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup diced tomatoes
  • 4 (10-inch) fat-free flour tortillas
  • 4 slices bacon, cooked crisp and crumbled
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup Chinese parsley, optional

Directions:

  1. Heat oil in medium skillet over medium heat.
  2. Add onions and cook until translucent, about 3 minutes.
  3. Whisk eggs, milk, green onions, salt, and pepper together in medium bowl.
  4. Mix in tomatoes.
  5. Pour into skillet; cook, stirring, over medium-low heat to desired doneness, about 3-5 minutes.
  6. Meanwhile, wrap tortillas in paper towel and microwave on HIGH for 1 minute.
  7. Place tortillas on individual plates.
  8. Spread egg mixture down center of each, top with bacon, and sprinkle with cheese and Chinese parsley.
  9. Fold in top and bottom of tortillas, then fold in sides, burrito-style.

Makes 4 servings.
