- Remove the skin and bones from the rotisserie chicken, and cut meat into 1-inch squares.
- Combine vinegar, soy sauce, sesame oil, sugar, chili paste, sherry, and pepper.
- Pour over chicken and mix lightly; stir in green onion and 1/3 cup of the peanuts.
- Place lettuce or salad greens onto large serving platter; top with chicken.
- Sprinkle remaining peanuts, the parsley, and sesame seeds on top.
