Zenzai (Azuki Bean and Mochi Ball Dessert Soup)

Ingredients:

Zenzai (Azuki Bean and Mochi Ball Dessert Soup)

  • 1 cup mochiko flour (glutinous rice flour that can be found in most Asian markets)
  • 2 3/4 cups water
  • 2 cans (18-ounces) tsubushian (unstrained red bean paste that can be found in most Asian markets)
  • 3/4 teaspoon salt

Directions:

  1. Mix mochiko flour with 3/4 cup of the water to form stiff dough; form into small balls.
  2. Cover mochi balls with a damp paper towel and set aside.
  3. In a medium sized saucepan, combine remaining water, tsubushian, and salt.
  4. Bring to a boil and add mochiko balls one at a time.
  5. Continue cooking and stirring until all the dumplings rise to the surface and are cooked through.

Makes 6 servings.
