- Place zucchini on baking pan, flat side up.
- In a small bowl, mix together olive oil and garlic; brush lightly on top of zucchini.
- Add salt and pepper to taste.
- Brush a heaping tablespoon of marinara sauce over each zucchini, leaving a small rim near edges uncoated.
- Sprinkle zucchini tops evenly with Mozzarella cheese, Parmesan cheese, then pepperoni.
- Bake 12-18 minutes, until desired doneness.
- Remove from oven; garnish with oregano.
- Serve warm.
